Smashed Chickpea, Blue Cheese, & Apple Sandwich

Smashed Chickpea, Blue Cheese, Apple, and Walnut Sandwich - a healthy and hearty vegetarian lunch idea!

With fall well underway, I’ve been craving heartier meals that incorporate seasonal ingredients like pumpkin and apples. I’ve seen a lot of smashed chickpea or “chickpea salad” sandwiches around the web before and have wanted to try my own version for a while now. I knew I wanted the crunch of apples in there, and because I can’t get enough of the apples-blue cheese combination, I mixed my apples and chickpeas with blue cheese, throwing in some walnuts for more texture, and a quick mustard and apple cider vinaigrette for added flavour. Combined with thick slices of fresh 7 grain whole wheat bread, lettuce, sprouts, and a little extra mustard, this made for a really satisfying sandwich (when my dad saw my lunch one day he asked if I was Dagwood) that I loved!

If I’d wanted it to be more of a chickpea salad sandwich, I could have added mayo, but I don’t ever have mayo around and I liked the flavour of the mixture on its own so I left it out. Without something like mayo to get everything to stick together, the filling is a bit messy in a sandwich, but that’s all part of the fun! You could try adding some if you prefer though, or even use a mixture of mayo and plain Greek yogurt to keep this on the lighter side.

Smashed Chickpea, Blue Cheese, & Apple Sandwich

Recipe my own but inspired by many other versions of smashed chickpeas that others have created!

Makes 4 sandwiches

Ingredients:

For the Chickpea Mixture:
1 (540mL) can of no-salt added chickpeas, drained and rinsed
1 large apple, cored and diced – any crunchy and sweet variety that you like will work
1/4 cup chopped walnuts
2 oz crumbled blue cheese
2 tablespoons chopped parsley
1 tablespoon extra-virgin olive oil
2 teaspoons apple cider vinegar
1 teaspoon Dijon mustard
1 shallot, minced
Salt and pepper

For the Sandwiches:
8 slices whole grain bread
Lettuce, and sprouts if desired
Extra mustard if desired (such as Dijon, honey mustard, or deli style mustard)

Directions:

In a small bowl, whisk together the olive oil, vinegar, Dijon, and shallot.  Let sit for at least 5 minutes (I find this takes some of the bite out of the shallots).

Smash chickpeas with a potato masher or large fork; they don’t have to be completely smashed, just partially.  I found it difficult to do with a fork so I pulsed mine several times in a food processor; this is quicker if you don’t mind washing an extra dish!  Mix the apples, walnuts, blue cheese, and parsley into the chickpea mixture.  Mix in the olive oil dressing and season mixture generously with salt and pepper.

Divide chickpea mixture evenly among 4 sandwiches, along with lettuce, sprouts, and extra mustard if desired (I liked these best with added mustard!).  Try to flatten or “smush” the chickpea mixture onto each sandwich so it sticks together.  Even still, these might be messy and I learned that it’s best to hold on to both ends of your sandwich as you’re eating to prevent the filling from falling out!

As I mentioned in my last post, I got to spend several days in Seattle last week for a conference.  It was my first time there and I loved it - especially all the amazing food and west coast beer available!  I will probably do a separate post on some of the things I tried in Seattle later this week for those who are interested, so I won't get much into it here, but the one thing I ate the most of was definitely seafood!

Without realizing it until later, I ate fish for dinner almost every night in Seattle, and even had it for breakfast one morning when I tried some bagel and lox (smoked salmon on a pumpkernickel bagel with cream cheese, red onion, and capers) in Pike Place Market.  Smoked salmon isn't something I eat too often, but I had to try it in a place that's famous for it, and it was really good!

When I returned home I had to make my own version of a smoked salmon breakfast sandwich!

Smoked Salmon

It's harder to find good smoked salmon here in Southwestern Ontario compared to Seattle where it was everywhere, but I managed to find this sustainably sourced smoked wild sockeye salmon from President's Choice.  It was a bit expensive (like all salmon tends to be here), but worth it!

To make my sandwich, I replaced the cream cheese with creamy ripe avocado, left out the red onion because I don't like it, added some arugula for a fresh peppery bite, and topped the whole thing with a poached egg!

The salmon, avocado, and egg combine for a pretty rich sandwich, but I kept the portion fairly small so it wasn't overwhelming, and I found the arugula helped to balance everything out.  And obviously this isn't something I'd eat for breakfast every morning, but it made a great weekend brunch!

You could also add red onion for some crunch or capers and dill to brighten up the rich flavours, I just didn't have any on hand.  You could even leave off the egg if you want, but how can you resist that beautiful runny yolk!

Smoked Salmon & Avocado Egg Sandwich

Makes 2 sandwiches

Ingredients:

1 tablespoon white vinegar
2 large eggs
2 slices whole grain rye bread, toasted
2 handfuls baby arugula
Salt and pepper
1 ripe avocado, sliced
1.5 to 2 oz thinly sliced smoked salmon

Directions:

To poach your eggs, heat a few inches of water in a wide saucepan. Add a splash of white vinegar (this will help the egg whites stay together). Crack your two eggs into separate small dishes. When the water is just at the point of starting to simmer (but bubbles are not breaking the surface yet), gently slide the eggs into the water. Use a spoon to nudge the egg whites closer to the yolk, turn off the heat, and let cook, covered, for 3-4 minutes. Gently remove eggs with a slotted spoon.  Smitten Kitchen and Simply Recipes both have great tutorials on poaching eggs if it's your first time!

To prepare sandwiches, add arugula and avocado to toasted bread slices, season with salt and pepper, top with smoked salmon and poached egg.  Feel free to add some chopped dill, capers, and/or red onion if you like!  Eat immediately while egg is still warm.

And just when we thought the worst of the cold weather was over, it came back this week to give us a reminder of why summer is so great!

I'd almost forgotten already what it feels like when your nostrils start to freeze up as soon as you step outside and your lungs hurt when you breathe in the cold air.  Needless to say, I'll be spending as much time indoors as possible this week and enjoying lots of hot chocolate and soup!

I've actually been making a lot more soup than normal lately, not just because of the weather but because I received an immersion blender for Christmas that I've loved trying out!  It makes pureeing soups so much easier than transferring it in batches to a blender, and more importantly it means a lot less dishes to clean up after, which is probably my favourite thing about it.

I have my eye on so many soup recipes I want to try now, but onion soup has stood out as the most comforting option lately, and it was an excellent choice!

This caramelized onion and potato soup is very similar to a French onion soup, but easier and faster to prepare, and perhaps a little bit healthier.  I didn't cook my onions quite as long as you would for a French onion soup - just long enough to give them that deep golden brown colour and rich flavour - and I also cooked them in just a bit of olive oil instead of tons of butter.  The other  main differences are that this version contains some garlic for flavour and potatoes for thickness, and that I pureed it all into a smooth soup (though next time I'll probably leave a few chunks in there for texture - I just got carried away with my immersion blender!).  Then I topped it with a simple piece of toasted whole grain bread with some melted cheese instead of baking the whole thing in the oven (with a lot more cheese).

You end up with a rich but light tasting soup that's perfect for a cozy winter evening indoors!

Caramelized Onion & Potato Soup

Serves around 4 as main course servings; 8 as smaller side dish servings

Ingredients:

2 tablespoons olive oil or canola oil
6 medium yellow onions, peeled and thinly sliced into half moons (or 3-4 large onions)
4 cloves garlic, minced
Salt and pepper
1 tablespoon white wine vinegar
1/2 cup dry white wine
1 tablespoon all-purpose flour
8 cups (2L) low sodium beef broth
1-1/2 to 2 cups chopped yellow potatoes
2 bay leafs
2 sprigs of thyme
4-7 slices thick rustic whole grain bread
4-8 slices gruyere, swiss, or provolone cheese

Directions:

Heat oil in a large heavy-bottomed saucepan or Dutch oven over medium heat.  Add onions and garlic, stir to coat with oil, and let sit for about 5 minutes, stirring occasionally.  Season with salt and pepper and stir.  Cook for an additional 25-30 minutes, stirring occasionally, until softened and caramelized with a deep golden brown colour.  (Cook for up to 45 minutes if needed).  Add vinegar to deglaze the pan.  Add wine and stir, scraping up the browned bits from the bottom of the pan.  Let simmer until reduced slightly, about 2-3 minutes.  Sprinkle flour over onions and stir.

Add beef broth, potatoes, thyme, and bay leaves.  Bring to a boil, then reduce heat and let simmer, partially covered, stirring occasionally, until potatoes are softened.  Discard bay leaves and thyme sprigs.  If desired, puree soup with an immersion blender or by transferring in batches to a blender.  You may puree all of the soup if you want it to be smooth, part of the soup for some texture, or none if you want it to be chunky, depending on what you prefer.  Season with salt and pepper to taste.

Preheat broiler.  Arrange cheese on bread and broil until cheese is melted, about 1 to 2 minutes.  Serve alongside or on top of soup.
